A botanical non-alcoholic aperitif made with Kent cherries, infused with wild fig leaf, vanilla, hibiscus and raw organic British apple cider vinegar. Tart cherry with green notes and a cream soda finish. Serve with sparkling water over ice. Or use it to make a cherry sangria with rosé, a seasonal spritz with fizz and soda, or a cherry collins with gin, lemon and soda.

Our cherries come from Dallaways, a second generation specialist cherry grower in Kent.

Dallaways Kent cherries

We source our cherries from Dallaways, a second-generation specialist cherry grower with orchards across Kent. Michael Dallaway took over the orchards from his father in 2000, and now grows over 20 varieties across around 7,500 cherry trees.

Kent’s soils and temperate climate are particularly well suited to cherries, giving the fruit a beautiful delicacy of flavour. The family also invite people to rent a tree, follow it from blossom to harvest and return to pick the cherries in summer.

How to serve

For a non-alcoholic aperitif, serve over ice, one part shrub to four parts soda. Garnish with a cherry or two.

For a cherry sangria, muddle halved cherries with 125ml rosé wine and 30ml shrub. Pour into a glass over plenty of ice and garnish with pink grapefruit slices. Add an optional shot of kirsch or triple sec for a little extra punch.

What is a shrub?

The shrub takes its name from the Arabic sharāb, meaning ‘drink’, and was originally a way of preserving fruit with sugar and vinegar - capturing it at its peak. It’s now enjoying a quiet revival as both a non-alcoholic aperitif and cocktail ingredient.
